Almond Cookies

Delicious Turkish almond cookies with rosewater. 
They are easy to make and nice with tea. They make great little gifts too.

Ingredients

3/5 cup butter
1 egg + 1 egg yolk
1 cup sugar
2,5 cups flour
1 cup powdered sugar
salt
1/4 cup almonds (without the peel)

For the syrup
2,5 cups of sugar
1- 3/4 cup water
3 mint sprigs
3 tablespoons of rosewater

Directions

Mix butter with egg, egg yolk, powdered sugar  and salt
Add bit by bit the flour to the mixture and kneed well. Roll the dough into a cylinder shape with a 1.5 diameter. Wrap the dough in film and place in the fridge for an hour.
Pre-heat the oven at 356 F.
Cut the dough in equal slices and roll each slice into little balls, place them on the baking paper. Flatten them some and brush them with egg, Place on each an almond and brush them again with egg. Place in the oven for around 15 - 20 minutes.  Meantime prepare the syrup. Bring water and sugar to the boil, add the mint leaves and rosewater, lower the heat and leave on the stove for a little longer. Remove the syrup from stove and add the lukewarm cookies. 
Take them out quick and place them on a grid.
