Turkish Yogurt Soup

Turkish yogurt (Yayla Çorbası in Turkish) soup is a soup I often make. It is a popular comfort dish here in Turkey and throughout Central Asia.. It is a quick and easy to prepare soup that is above all really yummy! We love it!

Yayla is the Turkish word for "highland." It may refer to: Yayla (resort), the name given to summer mountain resorts in Turkey

10 cups of meat stock
half cup rice
1,5 tablespoon flour
1 egg
2 cups yogurt
2 tablespoons butter or margarine
2 teaspoons dried mint
1 teaspoon paprika flakes


Mix together the yogurt, flour and egg in your soup pot, till smooth. 
Pour in the meat stock and bring to the boil.
When the soup boils add the rice and lower the heat, stir for some time so the rice doesn't stay at the bottom of your pot.
The soup is ready when the rice is done, Add the dried mint 
Melt your butter in a little pan and add the paprika flakes, stir for a while but make sure they stay red.
Serve your soup in a bowl or soup plate and add a teaspoon of the paprika and butter mix to each dish.
