Artichoke Hummus

A beautiful sunny day here in Mersin, Turkey.
Love it, all sliding doors open and a lovely breeze coming in from the sea while I am preparing this yummy healthy artichoke hummus.

Artichokes fresh from the "pazar" market

I love to visit our local weekly pazar and bring home fresh veggies and fruits. So that is what we did yesterday, my daughter Selin and I.

Ready to make artichoke hummus


4 artichoke hearts (I used fresh ones but you can get them out of a can too)
1 1/5 cup of chickpeas
2 garlic cloves - crushed
3 tablespoons tahini
juices of 2 large lemons
fresh parsley
3 tablespoons olive oil
salt, pepper and paprika


Remove all the leaves from the artichoke so only the hearts are left.
Put them, together with the chickpeas, tahini, crushed garlic cloves, lemon juice, 1/3 part of the olive oil, a bit of the parsley (keep some to garnish) and the spices (to taste) in a food processor, puree till smooth.

Garnish with the rest of the olive oil, some parsley leaves and sprinkle with a little red paprika powder.

Seve them with toasted pita bread and/or the slightly cooked artichoke leaves.

Of course I brought back much more from the "pazar" than what was needed for this hummus.
One thing I am very happy about is that the "Yeni dunya" (loquats) are all ready to pick! Deliciousness!
