Loquat Tart With Almonds

Good Sunday everyone. 
Today, as I mentioned yesterday I did use some of the loquats I got the other day. I decided to bake a tart, a bit as I would do with apricots actually. It's a simple one that taste great!. We especially loved the almonds with it, tasted a bit like marsepein which we all love.

I had never eaten loquats before I came to Turkey, don't think I even ever saw them in Belgium (where I am from). Well now I look forward to Spring in Turkey because that is when we can find them everywhere. So you see, better enjoy them when you can, because they don't last very long on the trees as the birds love therm very much too.

For the crust
1 1/2 cup all purpose flour
1 teaspoon sugar
8 tablespoons butter
4 tablespoons ice water

For the Filling
1/2 cup creme fraiche
1 egg lightly beaten
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
1/2 cup ground or crushed almonds
2 tablespoons honey
1 tablespoon flour
5 cups of pitted and quart-ed loquats
powdered sugar


In a bowl, combine the flour, butter and the sugar. kneed till you have a soft dough. 
Add the ice water and kneed some more. 
Shape the dough in a disk shape and put in the fridge for 30 minutes.

Pre-heat oven to 350F.

Butter your tart pan.

While your dough is in the fridge you prepare your filling.
Combine the creme fraiche, honey, extracts and egg in a bowl.  Whisk well, 
Then add the flour and whisk some more.

Take your dough out of the fridge and place in your buttered tart pan. 
Press in place with your fingertips.  
Add the ground almond  at the bottom. 

Bake your crust for about 10 minutes.

Take out of oven and pour in the filling. 
Add the halved loquats 

Place your tart back into the oven for another 50 a 60 minutes, until gold brown.

Remove from oven and sprinkle with powdered sugar. Let cool.

Sprinkle some more powdered sugar right before you serve.

They are rich in insoluble dietary fiber, pectin. 
Pectin retains moisture in the colon, and thus functions as bulk laxative.
Loquat fruit is an excellent source of vitamin-A. 
Fresh fruit is very good in potassium and some B-complex vitamins such as folates, vitamin B-6 and niacin and contain small amounts of vitamin-C. Potassium is an important component of cell and body fluids, helps controlling heart rate and blood pressure.
