Red Beet Hummus Dip with Yogurt

We love dips, especially healthy ones, oh.. and if they look good on top of it! 
Even more sooo..
Today I prepared a red beet hummus dip.... delish! 
If you've never had it, you should for sure try!

This is one if not my most favorite dips ever! I love red beets!
Very healthy! Yum!

Red Beet Hummus Dip -
Red Beet


3 red beets
1 cup fava beans (or chickpeas)
2 tablespoons tahini
3 tablespoons Greek yogurt
3 tablespoons extra virgin olive oil
juice of one large lemon
4 garlic cloves
1 large onion
1 tablespoon ground cumin
1 teaspoon poppy seeds


I used canned fava beans but this dip is nice with chickpeas as well. Canned or dried. If you use dried ones let them soak in water overnight.
Remove the peel of the beets, cut  in pieces and boil in water for about 30 minutes or until soft.
Chop the onion and garlic cloves and add to a skillet, sprinkle salt over them, add some of the cumin and stir , add a bit a the beetroot water. When done add everything to your food processor.
Add to a bowl, sprinkle with cumin and poppy seeds.
Serve with pita bread or raw vegetables like carrot, celery etc...

As I didn't use all the water I cooked the beets in, I decided to keep it for later use as it is great for coloring foods or to use in art projects!
